Tikta Rasa Recipe: Warm Salad with Dandelion Greens & Radicchio
A bitter, grounding dish for cleansing and clarity
Why This Works:
Tikta Rasa (bitter taste) is revered in Ayurveda for its detoxifying, cooling, and cleansing effects. It scrapes away toxins (āma), clears heat, and supports the liver and skin. In this recipe, dandelion greens and radicchio are gently sautéed in ghee with turmeric and black pepper— a simple, earthy combination that’s as medicinal as it is flavorful.
Ingredients (Serves 2)
- 1 bunch dandelion greens, chopped
- 1 small radicchio, shredded or sliced thin
- 1 tbsp ghee (or olive oil for a vegan version)
- ¼ tsp turmeric powder
- ¼ tsp black pepper
- Pinch of mineral salt
- Optional: squeeze of lemon or splash of apple cider vinegar (for balance)
- Optional garnish: toasted sesame seeds or sunflower seeds
Directions
- In a large skillet, melt the ghee over medium heat.
- Add turmeric and black pepper, stir for 15–30 seconds until aromatic.
- Toss in the dandelion greens and radicchio, and sauté gently for 3–5 minutes until just wilted but vibrant.
- Add a pinch of salt and stir to coat evenly.
- Turn off the heat and finish with a splash of lemon juice if desired.
- Serve warm, optionally topped with seeds or herbs.
Ayurvedic Notes:
- Bitter greens stimulate the liver, purify the blood, and calm excess Pitta and Kapha.
- Turmeric enhances the bitter quality and acts as an anti-inflammatory.
- Black pepper supports digestion and increases the bioavailability of turmeric.
- Ideal for spring cleansing, summer cooling, or when feeling heavy, sluggish, or overheated.
Perfect for:
- A light lunch or side dish
- Pitta-Kapha balancing
- Supporting gentle daily detox without overwhelm
