Lemony Lentil Minestrone
Servings: 4
Time: 35–40 minutes
Dosha Focus: Light and cleansing for Kapha, refreshing for Pitta
Style: Italian-inspired, Ayurvedic-enhanced
Ingredients:
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced (omit for Pitta if needed)
- 1 stalk celery, chopped
- 1 small carrot, diced
- 1 small zucchini, diced
- 1 cup cooked green or brown lentils (or ½ cup dry, soaked overnight)
- ½ tsp ground cumin
- ¼ tsp black pepper (optional for Pitta)
- 1 tsp dry oregano or fresh thyme
- 4 cups vegetable broth or water
- 1 cup chopped greens (spinach, kale, or chard)
- Zest and juice of 1 lemon
- Sea salt to taste
- Optional: fresh parsley or basil for garnish
Instructions:
- Sauté the aromatics:
In a large pot, heat the olive oil. Add chopped onion, garlic, celery, and carrot. Cook until soft and fragrant (5–6 minutes). - Add the zucchini and spices:
Stir in the cumin, oregano, and black pepper. Add zucchini and cook for 2–3 minutes more. - Add lentils and broth:
Pour in the cooked lentils and broth. Bring to a boil, then reduce to a gentle simmer. Let it cook for 15–20 minutes until all veggies are tender. - Add greens + lemon:
Stir in the chopped greens, lemon zest, and lemon juice. Cook for 3–4 minutes until greens wilt and flavors meld. Season with salt. - Serve hot or warm, garnished with parsley or basil, and a drizzle of olive oil or extra lemon if desired.
Ayurvedic Notes:
- Kapha: This soup is ideal, light, lemony, and spiced. You can add a pinch of chili flakes or mustard seeds for extra stimulation.
- Pitta: Use less garlic and black pepper; choose spinach and parsley as your greens.
- Vata: Add a tsp of ghee or use red lentils for a softer, gentler version.
