Fresh papaya salad with mint and chili

Ayurveda Inspired Green Papaya Thai Salad

Here’s a delicious Ayurvedic-inspired version of the Green Papaya Thai Salad, adapted to be more in line with Ayurvedic principles while keeping the spirit of the dish alive, fresh, vibrant, and balancing.

Ayurvedic Green Papaya Salad

Tridoshic variation (can be adjusted slightly for Vata, Pitta, or Kapha)

For The Dressing

  • 2 tbsp cold-pressed sesame oil (more warming and grounding)
  • 2 tbsp fresh lime juice (Pitta types may use less)
  • 1 tsp tamarind paste (instead of soy sauce, which is fermented and aggravating to some doshas)
  • 1 tsp raw honey (add only when the dressing has cooled; never heat honey in Ayurveda)
  • ½ tsp grated fresh ginger
  • ½ a green chili (optional) or pinch of black pepper (omit or reduce for Pitta types)
  • ¼ tsp rock salt or sendha namak

For The Salad

  • 1½ cups shredded green papaya (cooling, detoxifying – especially good for Pitta and Kapha)
  • ½ cup shredded carrot
  • 2 tbsp finely chopped cucumber (optional, cooling and hydrating)
  • ¼ cup steamed moong sprouts (lightly steamed to ease digestion)
  • ¼ cup toasted sunflower seeds (substitute for peanuts, which can be heavy and aggravating)
  • 2 tbsp chopped fresh coriander (cilantro)
  • 1 tbsp freshly grated coconut (optional – sweet and cooling)

Instructions

Make the Dressing

  1. In a small bowl, whisk together sesame oil, lime juice, tamarind paste, ginger, salt, and black pepper or chili.
  2. Let sit for 5-10 minutes for the flavors to blend.
  3. Once cool, stir in honey.

Prepare the Salad

  1. Soak shredded green papaya and carrot in cold (not iced) water for 10 minutes to refresh.
  2. Drain well and pat dry with a clean cloth.
  3. In a large bowl, combine papaya, carrot, cucumber (if using), sprouts, sunflower seeds, and coriander.
  4. Pour the dressing over and toss gently to coat everything evenly.
  5. Let it sit for 5–10 minutes to absorb the flavors. Serve at room temperature (not cold, to support Agni/digestion).

Dosha Notes:

  • Vata: Add a touch of avocado or warm the dressing slightly before adding; avoid chili.
  • Pitta: Reduce lime and chili; add more cucumber and coconut.
  • Kapha: Use more lime and chili; minimize coconut and seeds.
