Ayurveda-Italian Fusion – Yellow Mung Daal Risotto
Let’s do an Ayurvedic Fusion Risotto, creamy, comforting, and gut-friendly, using yellow mung daal instead of Arborio rice. This version leans into Italian risotto textures but keeps it light and digestible for spring, especially balancing for Kapha and gentle enough for all doshas with slight tweaks.
Yellow Mung Daal Risotto (Ayurveda-Italian Fusion)
Ingredients:
- 1 cup yellow mung daal, soaked 2–4 hours and drained
- 3–4 cups warm veggie broth or water, as needed
- 1 tbsp olive oil or ghee
- 1 tsp cumin seeds
- 1 tsp fresh grated ginger
- 1 small shallot or leeks, finely chopped
- 1 garlic clove, minced (optional)
- 1/2 small fennel bulb, finely diced
- 1 small zucchini, diced
- 1/4 cup peas or chopped asparagus tips
- 1 tbsp sun-dried tomatoes, chopped
- 1/2 tsp turmeric
- 1/2 tsp dried basil
- 1/2 tsp oregano
- Salt and black pepper to taste
- 1 tbsp lemon juice
- Optional: Nutritional yeast or cashew cream for extra creaminess
- Garnish: Fresh parsley, basil, or microgreens
Directions:
- Rinse mung daal well until the water runs clear. Set aside.
- Heat olive oil or ghee in a wide sauté pan. Add cumin seeds, ginger, and shallots/leeks. Cook until soft.
- Stir in garlic, turmeric, basil, and oregano.
- Add fennel, zucchini, and sun-dried tomatoes. Sauté 3–4 minutes.
- Stir in mung daal and toast gently for 1–2 minutes.
- Begin by adding warm broth, ½ cup at a time, stirring often. Let each addition absorb before adding more.
- Continue for 25–30 minutes, or until the daal breaks down into a risotto-like creaminess. Add peas or asparagus in the last 5–7 minutes.
- Finish with lemon juice, salt, pepper, and optional nutritional yeast or cashew cream.
- Garnish and serve warm.
Tips for Dosha Customizing:
- Kapha: Go easy on oil, avoid dairy, add extra black pepper and bitter greens like arugula.
- Pitta: Use cooling herbs (like coriander instead of garlic), skip the sun-dried tomato if sensitive.
- Vata: Add more ghee or cashew cream for moisture, and use warming herbs like thyme or rosemary.
