Ayurvedic Daal Dhokli with Toor Daal (or black-eyed pea)

Here’s a beautifully warming, tridoshic recipe for Ayurvedic Daal Dhokli using Toor Daal, with a note on how to substitute Black-Eyed Peas if desired.

Why It’s Balancing

  • Toor Daal (Pigeon Peas) is grounding and nourishing, excellent for Vata, and light enough for Kapha, especially when spiced properly.
  • Black-Eyed Peas are a great alternative, easier to digest, especially in spring.
  • The use of warming digestive spices like cumin, ginger, and ajwain supports Agni (digestive fire).
  • Dhokli (whole wheat dumplings) add comfort and satiety without heaviness.

Ingredients

For the Daal Base:

  • ¾ cup Toor Daal, rinsed (or use black-eyed peas, soaked 4–6 hours)
  • 4 cups water
  • 1 tsp ghee or olive oil
  • 1 tsp cumin seeds
  • 1 pinch hing (asafoetida)
  • 1 tsp fresh ginger, minced
  • 1 small tomato, chopped
  • ½ tsp turmeric
  • ½ tsp coriander powder
  • ½ tsp fennel powder (optional but cooling)
  • Salt to taste
  • Juice of ½ a lime or lemon
  • Fresh cilantro to garnish

For the Dhokli (Dumplings):

  • ½ cup whole wheat flour
  • ½ tsp ajwain (carom seeds) or cumin seeds
  • ¼ tsp turmeric
  • Pinch of salt
  • 1 tsp ghee
  • Warm water to knead

Instructions

1. Cook the Daal (or Black-Eyed Peas)

  • If using Toor Daal: pressure cook or boil with turmeric and water until soft (15–20 mins in a cooker).
  • If using black-eyed peas, cook until soft but not mushy (20–25 mins).

2. Make the Dhokli

  • Mix flour with turmeric, ajwain, salt, and ghee.
  • Add warm water and knead into a firm dough.
  • Roll into a thin sheet and cut into squares or diamonds.

3. Prepare the Tadka (Tempering)

  • In a separate pan, heat ghee or oil.
  • Add cumin, hing, and minced ginger.
  • Add chopped tomato, turmeric, coriander, and fennel powder.
  • Cook until soft and fragrant.

4. Combine & Simmer

  • Add the tadka to the cooked daal.
  • Bring to a gentle boil and drop in dhokli pieces one by one.
  • Simmer for 10–15 minutes until the dhokli is cooked and soft.

5. Final Touches

  • Add lime or lemon juice.
  • Garnish with chopped cilantro.
  • Serve warm, ideally as a stand-alone meal.

Dosha Modifications

Vata: Add more ghee, warming spices (like ginger & cumin), and make dhokli soft. Avoid lime if sensitive.

Pitta: Skip tomato and reduce ginger. Use coconut oil or sunflower oil. Add more cilantro and fennel.

Kapha: Minimize ghee and oil, use more warming spices (black pepper, turmeric). Keep dhokli thin and avoid heavy toppings.

Optional Add-ins:

  • Chopped spinach or methi leaves for greens
  • A dash of jaggery for sweet-sour balance (good for Vata)
  • Serve with a side of fennel or mint digestive tea
