Butternut Tikka Masala with Cardamom Rice
A grounding, mildly spiced dish infused with digestive spices, balancing for Vata and Kapha, and gentle enough for Pitta when moderated.
Butternut Tikka Masala
Ingredients:
- 2 cups butternut squash, peeled and cubed
- 1 tbsp ghee or cold-pressed coconut oil
- 1 tsp cumin seeds
- 1 small cinnamon stick
- 1 bay leaf
- 1 tsp grated fresh ginger
- 1 clove garlic, minced
- ½ tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- ½ tsp smoked paprika (optional)
- ½ cup crushed tomatoes or tomato puree
- ¾ cup coconut milk (or fresh homemade almond milk for a lighter version)
- Himalayan salt to taste
- Fresh cilantro leaves for garnish
Instructions:
- Roast the Butternut: Preheat oven to 400°F (200°C). Toss butternut cubes in a bit of ghee, sprinkle with turmeric and salt, and roast for 20–25 minutes until golden and tender.
- Prepare the Masala Base: In a pan, warm ghee. Add cumin seeds, cinnamon, and bay leaf until aromatic. Stir in ginger and garlic.
- Add turmeric, coriander, paprika, and garam masala. Let the spices bloom, then add tomato puree.
- Simmer for 5–7 minutes until slightly thickened. Add coconut milk and stir to combine.
- Fold in the roasted butternut cubes. Simmer for 5 minutes to let the flavors integrate.
- Garnish with fresh cilantro.
Cardamom Rice
Ingredients:
- 1 cup basmati rice, soaked 20 mins and rinsed
- 2 cups water
- 1 tbsp ghee
- 4 green cardamom pods (lightly crushed)
- Pinch of saffron (optional)
- Pinch of salt
Instructions:
- In a pot, warm ghee and add cardamom pods. Let them release aroma (1 min).
- Add rinsed rice and stir to coat with ghee.
- Pour in water, saffron, and a pinch of salt.
- Bring to a boil, then reduce to low heat, cover, and simmer for 12–15 minutes until water is absorbed and rice is fluffy.
- Let sit covered for 5 minutes. Fluff and serve warm.
Ayurvedic Tips:
- Vata: Add extra ghee and serve with a side of ginger pickle or warming chai.
- Pitta: Reduce garlic, skip paprika, and increase coconut milk for a more cooling effect.
- Kapha: Use less coconut milk and more warming spices like black pepper and mustard seeds.
