Green Whole Mung Bean Burger

A Green Whole Mung Bean Burger is a nourishing, plant-based, protein-rich dish that blends Ayurvedic ingredients with a modern twist. It’s perfect for balancing Kapha and Pitta, and energizing Vata—all while being delicious and satisfying.

Here’s a wholesome recipe for your Ayurvedic Mung Bean Burger

Ingredients (Makes 4–6 patties)

  • 1 cup whole green mung beans, soaked overnight and boiled until soft
  • ½ cup grated carrot or beetroot (optional for moisture & color)
  • ½ cup finely chopped spinach or coriander
  • 1 small onion, finely chopped (optional)
  • 2 cloves garlic (optional – omit for sattvic version)
  • 1 inch ginger, grated
  • 2 green chilies, finely chopped (optional)
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • ½ tsp garam masala or curry powder
  • 1 tbsp rice flour or chickpea  flour (besan) – to bind
  • Salt, to taste
  • 1 tbsp lemon juice
  • 1–2 tbsp ghee or coconut oil, for pan-searing

Instructions

  1. Prep the Mung Beans: Soak mung beans overnight, then boil until soft but not mushy. Drain well.
  2. Mash & Mix: In a mixing bowl, mash the mung beans with a fork or potato masher. Add in veggies, spices, flour, lemon juice, and salt. Mix into a dough-like consistency.
  3. Form Patties: Shape into small to medium burger patties. If the mix is too wet, add a bit more flour.
  4. Cook: Heat ghee or oil in a skillet. Pan-fry patties on medium heat for 3–4 minutes on each side, until golden and crisp on the outside.

Serving Suggestions

  • Serve with mint-coriander chutney, or yogurt tahini sauce
  • Add to a whole grain bun or wrap with lettuce, cucumber, and tomato
  • Pair with a light lentil soup or roasted veggies for a balanced meal

Ayurvedic Doshas and effects:

  • Vata: Grounding and energizing, especially with ghee and warm spices
  • Pitta: Calming with greens, mung, and cooling herbs (skip excess chili)
  • Kapha: Light and digestible with spices and minimal oil
