Spiced Chickpea Cacciatore
Servings: 4
Prep Time: 15 min
Cook Time: 30–40 min
Dosha Focus:
- Vata: Excellent (rich, grounding, warming)
- Kapha: Balancing with warming spices and light legumes
- Pitta: Reduce or omit chili; keep spices mild
Ingredients:
- 2 tbsp olive oil or ghee
- 1 small red onion, chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 red or yellow bell pepper, sliced
- 1 carrot, chopped
- 1½ cups cooked chickpeas (or 1 can, rinsed)
- 1½ cups crushed tomatoes
- ½ tsp ground cumin
- ½ tsp ground coriander
- ¼ tsp turmeric
- ¼ tsp smoked paprika or sweet paprika
- Optional: pinch of red chili flakes (skip for Pitta)
- Salt to taste
- Fresh thyme, oregano, or parsley (Italian herbs)
- Optional: 1 tsp apple cider vinegar or a squeeze of lemon (added at the end)
Instructions:
- Sauté the aromatics:
Heat oil or ghee in a wide pan. Add onions and cook for 2–3 minutes. Add garlic, ginger, and carrot. Sauté for another 5 minutes until soft. - Spice it up:
Stir in cumin, coriander, turmeric, paprika, and chili flakes (if using). Toast gently for 1 minute until fragrant. - Add chickpeas and peppers:
Toss in the cooked chickpeas and sliced bell pepper. Stir to coat in spices. - Simmer with tomatoes:
Pour in crushed tomatoes and a splash of water (¼ cup if needed). Cover and simmer gently for 20–25 minutes, stirring occasionally. - Finish & balance:
Add salt, herbs, and optional vinegar or lemon juice for brightness. Simmer 5 minutes more. - Serve hot over warm quinoa, millet, or roasted sweet potatoes, or simply with fresh herbs and a drizzle of olive oil.
Ayurvedic Notes:
- Vata: Add extra oil or ghee, and serve warm with a little rice or ghee-toasted bread.
- Pitta: Skip chili flakes and go light on garlic. Add fennel instead of paprika for sweetness.
- Kapha: Keep oil minimal, and increase cumin/ginger to stimulate digestion.
