Ayurveda-Italian Yellow Mung Daal (Spring Version)
Let’s create a warm, balancing Ayurveda-style Italian Yellow Mung Daal for spring—a time when the Kapha dosha is dominant and needs light, warming, gently drying foods. We’ll keep it tridoshic-friendly but particularly Kapha-pacifying, with Italian herbs and spring veggies for that fresh seasonal twist.
Ayurveda-Italian Yellow Mung Daal (Spring Version)
Ingredients:
- 1 cup yellow mung daal (soaked 2-4 hours or overnight)
- 4 cups water (or as needed)
- 1 tbsp olive oil (or ghee if desired)
- 1 tsp cumin seeds
- 1/2 tsp fennel seeds (sweet but digestive — lovely for spring)
- 1/2 tsp turmeric powder
- 1/4 tsp black pepper
- 1 tsp fresh grated ginger
- 1 garlic clove, minced (optional for Pitta)
- 1/2 small fennel bulb, diced
- 1 small zucchini, diced
- 1/2 cup spinach or arugula (lightly chopped)
- 1 tbsp chopped sun-dried tomatoes (for Italian umami)
- 1 tsp dried oregano
- 1/2 tsp dried basil (or 1 tbsp fresh)
- Salt to taste
- Juice of 1/2 lemon
- Optional: Fresh parsley or basil to garnish
Directions:
- Rinse and drain your soaked mung daal.
- In a medium pot, heat olive oil or ghee. Add cumin seeds and fennel seeds, let them sizzle.
- Add ginger, garlic (if using), and turmeric. Stir until fragrant.
- Add fennel bulb, zucchini, and sun-dried tomatoes. Sauté for 3–4 minutes.
- Add rinsed mung daal and water. Bring to a boil, then simmer covered for 25–30 minutes or until daal is soft and broken down.
- Add spinach/arugula, dried herbs (oregano, basil), salt, and black pepper. Simmer another 5 minutes.
- Finish with lemon juice and fresh herbs.
Why it works for spring:

- Zucchini & greens are spring veggies — cleansing and light.
- Fennel & ginger stimulate digestion, warm the body gently.
- Italian herbs give an earthy freshness without heaviness.
- Lemon juice adds brightness and aids digestion.
